Grilled Chicken, Bacon & Avocado Salad

  2. I just tried a version of this today because I love avocado! I actually used guacamole instead of mayo which worked quite well to give it moisture! Thanks for the idea :)

  3. Would you add lime if you were going to take it somewhere? I'm going to be bringing lunch in a cooler, but you say to serve immediately, I'm assuming because of the avocados? It looks so good!

    1. Yes, because of the avocados :) But a bit of lime or lemon juice would probably be great to keep if fresh! Or you could make it without the avocado and add that right before you eat. Either should work :)

    2. If you put the avocado pits in this mixture, it really helps keep the avocados green and fresh looking and tasting!! Just and FYI!! Enjoy...

  4. The recipe looks delicious and I definitely want to try it out. Just a small , could you please give me the exact baking and grilling time required for the bacon and chicken. Would appreciate the help and look forward to trying this recipe

    1. Of course! I like to slice my chicken breasts in half so they are thin. They cook faster that way which keeps them from drying out. Sliced in half, I grill the breasts for about 5 minutes per side. The internal temperature of chicken needs to be above 165 degrees, so I always check with a meat thermometer.

      I make my bacon in the oven- saves the house from getting super stinky with they fried smell. Oven on 400, it takes about 10-15 minutes, depending on how crisp you like it!
