Paleo Snickerdoodles

  1. Can you use coconut flour instead of almond flour??? They look great!!!

    1. Not as a 1:1 substitution. Coconut flour is a lot more dense and requires a lot more liquid. Most recipes use coconut flour in small amounts, or add several eggs to compensate. I'd say you could probably substitute 1/4-1/2 cup of coconut flour in, but I wouldn't do any more than that. And obviously I haven't tried that, so I'm not 100% sure how they'll be. :) But let me know how it goes if you try it!

  2. I don't understand why none of the dessert recipes use Stevia Powder. I even have a "baking stevia"
    that has added fiber in it. Am I missing something? I may try this with stevia replacing the coconut
    sugar. Also the ingredients has honey listed and instructions says agave, guess it doesn't matter which you use in the batter.

    1. Thanks for catching the honey/agave discrepancy! Both are fine to use. ;) Stevia should also be fine, I just don't use it.

  3. I added a drop of almond milk when the batter didn't quite stick together! Worked great and tastes lovely :)
